Healthy Fudge, and its so good!.
You know those days you need something sweet but also healthy.
Something to satisfy that need to just have a little bit of something with your mid-morning coffee.
I stumbled upon an amazing blog from a lady called Monique which well be my go to when I am looking for something that feels naughty but is actually really nice !!!!
This fudge sounds and tastes divine and the best bit is it is so easy to make and takes a matter of minutes.
It is made in two layers and this is all you are going to need to make them:
Layer 1
1/2 cup crunchy peanut butter (I use Pics because I love it and it is made from nothing but peanuts)
1/3 cup coconut butter
1 tablespoon pure maple syrup, or coconut palm syrup or a few drops of liquid stevia if like me you are steering clear of most sugar products
Layer 2
1/2 cup of crunchy peanut butter
1/3 cup coconut butter
1 tablespoon unsweetened cocoa powder (or raw cacao powder)
1 tablespoon pure maple syrup or coconut palm syrup or a few drops of liquid stevia (if like me you are steering clear of most sugar products)
Method
Line a loaf pan with baking paper (this makes it easy to remove the fudge from the pan later)
In a bowl mix together peanut butter, coconut butter and sugar product and then mix until smooth.

Add the first bowl mixture to the prepared pan pan and spread evenly towards the sides.
Tap the pan on the counter a few times to get any air bubbles out and also to help distribute the layer evenly.
Then add the second bowl full of mixture on top of the first one.
Use a rubber spatula to gently spread towards the edges but be careful not to mix the two layers together.
If like me you love a bit of saltiness with your sweet then sprinkle some sea salt over the top and that’s it.
Put it in the freezer for 10-15 minutes until the fudge hardens and you have a perfectly gorgeous little mouthful of healthy but sweet deliciousness.
