I am always looking to update my self care routines and I am also a big fan of coffee so whenever I come across something that goes hand in hand with both I take notice. Step in the delicious Cinnamon Coconut Cream Cappuccino.
This delicious drink is something I have been making a lot just recently and I love it. As it is cold here in New Zealand at the moment I am all about the hot drinks and the warming spices which make me feel cosy and warm and deliciously cared for, and they are good for you which is a triple whammy.
It is super easy and really quick to make and the sweet but deliciously spicy and coconutty flavour is wonderous.
It takes literally 5 minutes to prep and approximately 10 minutes or less to make so within 15 minutes you can be enjoying this delicious cup of self-care.
What you will need:
A cup of coconut milk of your choice (I love Alpro but any that you love will do)
1 teaspoon of Cinnamon
1/4 teaspoon of vanilla extract
A shot of your favourite coffee (I use my Nespresso machine coffee pods but whatever you have to hand is good)
I love to top mine with a garnish of silky foamed milk and a sprinkling of cinnamon to top it off and enhance the enjoyment but that’s just my preference.
A cappuccino for me is all about the foamy milky topping and the chocolate or cinnamon on top which is why this is purely up to your personal choice.
How to Make it:
Add the coconut milk and cinnamon to a saucepan. Bring to the boil
Add the vanilla and whisk slightly to combine
Brew the coffee in the way you usually make your coffee
Pour the delicious coconut milk in to the coffee
If you are using it, top with the foamy milk and sprinkle with more cinnamon to taste
All you do now is sit in a special place, take 5 minutes or more completely for yourself, savour the taste and just enjoy the moment.

Note:
The barista quality milk that I use (as above) usually foams much easier than normal plant based milk so if you enjoy this as part of our cuppa do use it
You can add Stevia or natural coconut sugar if you prefer a sweeter taste
If you are not a fan of store bought milk or want it to be even purer by all means use a can of coconut cream instead and add water to create the desired milk consistency
